Porchetta is an iconic product of both central Italy and the Veneto region in the north.
Across the country, it is typically served hot as a “panino”, or sandwich, and sold by street vendors or “pitchmen”, especially during public events or holidays.
It can also be served as a filling for pizza bianca (“white pizza”), eaten as an entree or sliced as a cold cut for picnic-style sandwiches.
Porchetta is generally seasoned with salt, pepper, garlic, rosemary and herbs that vary by region or family recipe, and slow roasted on a rotisserie spit or in an oven.
Porchetta has been selected by the Italian Ministry of Agricultural, Food and Forestry Policies as a “traditional agricultural-food product”, one of a list of traditional Italian foods held to have significant cultural relevance.
