Chapter: a new, carefully cultivated brasserie just off of Ace's lobby. Rooted in a fresh, thoughtful focus on locally sourced vegetables and seafood, Jud and Ken present their menu from a mostly European angle with subtle nods to the exotic seamlessly introducing new flavors to familiar ideas. There is no conflict in folding unctuous Sea Urchin in Pasta Noodles or a French Dip/Bahn Mi Hybrid. Contradictions are at the heart of what makes L.A. Chapter a thoroughly American restaurant. The techniques are classic and simple: olive oils and vegetable purees are favored over butter and cream, fresh herbs and colorful accents keep plating contemporary and elegant.
